INGREDIENTS For Making Parsley Bean Salad
800 gram of beans, rinsed and drained, or 3 cups cooked beans
400 gram can contain chickpeas, rinsed and drained, or 1 ½ cup cooked chickpeas
1 Small Onion, diced
2 Stalks Celery, cut in half or 1/3 of length and chopped
1 Ripe Red Tomato, chopped
1 medium Cucumber, peeled, seeded and diced
¾ Cup chopped fresh Parsley
2 tablespoons fresh chopped Mint
1 tablespoon Lemon juice
3 Garlic cloves, pressed or sliced
¾ teaspoon of Salt
¾ Black pepper
How To Make Parsley Bean Salad
In a serving bowl, combine prepared red beans, chickpeas, onion, celery, tomato, cucumber, parsley, and mint.
Make the lemon dressing: In a small bowl, beat the olive oil, lemon juice, garlic, salt, and pepper until they are emulsified. Pour over the mixture of beans and vegetables and mix well. Serve immediately or to get the most flavor, keep it in the refrigerator, covered, for a few hours or more.
