Gajar halwa, also known as gajrela or gajarer halwa, it is a sweet dessert pudding made from carrots from the Indian subcontinent. It is done by placing the grated carrot in a saucepan containing a specific quantity of desi ghee, full-fat milk, and sugar and cooking while stirring regularly. It is often served with a garnish of almonds and pistachios, cashew and raisins. Dessert is traditionally consumed in all festivals in India, mainly on the occasion of Diwali, Holi, Eid al-Fitr and Wedding Ceremonies. It is served hot during the winter.
Selection of Carrot should be very important because the taste of gajar halwa depends on carrots quality also. Carrots should be little soft and juicy.

Ingredients For Preparing Gajar Halwa
- Carrots – 8 Big Carrots
- Milk – 2 cups
- Ghee – 2 tbsp
- Sugar – 1 cup
- Dry Fruits- 1/4 cup (- cashew, almonds, pistachios, and raisins)
- Cardamon – 1/4 tsp cardamom powder)
How To Prepare Gajar Halwa
1-Wash and peel the carrots and grate with the help of a Grater.
Suggestion– If you want to make Gajar Halwa and don’t have enough time to grate the carrot just peel the carrot, cut into medium pieces then make them boil in the pressure cooker. It takes less time as compare to grating the carrots. Carrot also crushed smoothly by applying this method.
2-Heat the ghee in a small pot and fry the dry fruits- cashew, almonds, pistachios, and raisins in it.
3-Heat the milk in a thick-bottomed pan and add the carrot.
4-Cover and cook over medium heat, stirring occasionally to avoid sticking to the bottom.
5-After about 15-20 minutes, when all the milk is absorbed by the carrot, add sugar or sugar powder or sugarfree powder if you have any sugar problem or diabetes and stir continuously.
6-After about 8 minutes, the oil begins to separate from the halwa. At this point, add the cardamom powder, the fried dry fruits – cashew, almonds, pistachios, and raisins and 1 tablespoon of ghee.
7-Mix for one minute and turn off.
8-You can also add khoya to it. Khoya will increase its yummy rich flavored taste.
9-And Your so yummy, delicious mouth-watering Gajar Halwa is ready.
10-Serve hot Gajar halwa or you can also serve it cold.
Note: To make cardamom powder, grind with little sugar to obtain a fine powder.
